Guava duff- Bahamas Tradional recipe

guava duff is a  delicious dessert served in the Bahamas  that is made through a laborious process of folding the fruit into the dough and boiling and is served with a sauce. This meal is topped off with a large glass of ice cold "switcha" (lemon, sugar and water mixture) or beer.


  • 2 oz butter
  • 1 cup sugar
  • 3 eggs beaten
  • 2 cups guava pulp
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 3 cups flour
  • 2 tsp baking powder
  • black pepper taste


  1. Cream together the butter and sugar for about 30 minutes, then add the eggs and continue to mix for a further 5 minutes. Blend in the guava pulp, nutmeg, cinnamon and cloves.
  2. Sift together the flour and baking powder, then fold it into the mixture. Pour the mixture into the top of a greased double boiler and steam for approximately 2 hours, or until an inserted skewer comes out clean.


I made a sauce that had 
1/2 cup sugar 
1/2 cup butter 
1 egg, separated 
1 tbsp. rum 
2 tbsp. of guava pulp 
Cream the butter and sugar with egg yolk, guava and rum. Beat egg white until fluffy and add to butter/sugar mixture. Add a tsp. or two of hot water if too stiff.
